ay! Spring has sprung! The scent of flowers is overwhelming even the city smells of Manhattan. If you haven't noticed all that's growing around you -- take a look at some kids (yours or others'). They notice every little bud and movement of squirrel, bee and the smallest bug, helping you bring your attention to the beauty of the season (and for Eckhart fans -- to the present moment).

 

April is a time to plant seeds, outside in your garden, and inside your life. This is a great time to think about what you are growing and nurturing in your own life. I was delighted to share my own thoughts on this with The Family Groove, along with some great Moms on the Street from LA, OH and MA. Check out their thoughts here, as you contemplate your own April planting plans.

 

April has also brought about the launch of the Mothers & Menus Channel on PodcastGO.com. We started off with episodes on Easy Snacking, Honoring Cravings and Quick Dinner Prep. Tune in again for more episodes next month, when I will attempt to bring my three-year-old son Ethan into the kitchen!

 

With spring comes my favorite holiday, Passover, for so many reasons -- family, freedom, food -- and not the least of which is the opportunity to go bread-free for a week! I was too tied up with Seder plans to get this newsletter out on time -- but I guarantee that you can enjoy the Roasted Green Beans, Fennel and Apple Salad below for any occasion (including a quick dinner side).

Healthy Holidays

Spring has sprung and, in our home, this means Passover is around the corner. I love this holiday for all it represents in terms of family and freedom -- but what gets me nervous is all that delicious food! So I have learned to adapt our family favorites -- keeping them traditional yet healthy and fresh. One favorite dish is green beans with onions and matzo meal to create a thick sauce. Instead -- I roast them -- serving them as a salad that works either warm or cold (one less thing to heat up during the seder).

 

Roasted Green Beans, Fennel and Apple Salad

Of course, you can enjoy this dish any time of year -- it's quick and easy (like all my favorites) and really tantalizes your tasetbuds with a mixture of sweet and savory, creamy and crunchy! I list Balsamic vinegar as an ingredient, but feel free to play around with any flavored vinegar -- I love Raspberry vinegar for a sweet finish. 

 

     1 lb of green beans, trimmed

     1 medium fennel, sliced

     1 apple, preferably Granny Smith, cored and sliced

     2 tablespoons olive oil

     1 tablespoon Balsamic vinegar

     2 tablespoons pine nuts, toasted, optional

     Salt and pepper to taste

 

Preheat oven to 450 degrees. Line 2 baking sheets with foil.

 

In a large bowl, gently toss green beans, fennel and apple with olive oil. Lay out the green beans in a single layer in the first pan. Lay out the fennel and apple in a single layer on the second pan. Place both pans in the oven. Roast the fennel and apple until they brown, about 15 minutes, remove from oven and let cool. Continue roasting the green beans for an additional 10 minutes.

 

Using a spatula, remove the apple, fennel and beans in a medium bowl, drizzling the olive oil from the pan. Add Balsamic and toss, along with pine nuts, if using. Season with salt and pepper to taste. Serve warm or cold.
